The Â鶹AV Bachelor of Science Degree in Nutrition – Dietetics Track will prepare and qualify you to apply for and complete an Accreditation Council for Education in Nutrition and Dietetics-accredited internship program in nutrition and dietetics.
You'll take courses in general nutrition, medical nutrition therapy, community nutrition, nutrition through the life cycle, nutritional biochemistry, food science and food service management. This program is accredited through ACEND. After successfully completing the IP and passing the registration exam, you will become a Registered Dietitian Nutritionist.

Microbiology for Science Majors: Students in this course will learn specific information on the fundamentals of microbiology including cell types, cell structure, microbial growth and control, microbial metabolism, microbial genetics and biotechnology, microbes and human interactions, microbial pathogenesis and applied and industrial microbiology. Cause and effect relationships between microbial growth and human disease, interpretation of symptomatic and laboratory information in diagnosis of disease, prevention of disease and treatment of diseases are stressed. Laboratory activities will reinforce principles of microbiology, including metabolism, structure, function, genetics and phylogeny of microbes.
Senior Seminar Professional Development: Leadership, personal style, and protocol for working as a professional. Assessment of individual strengths, areas for improvement, and interpersonal relationship skills. Includes the development and nature of the profession, entry into the profession, exploration of career options, and opportunities for graduate study. Requires development of a personal portfolio.
Basic Foods: Basic culinary techniques, proper food handling procedures, introduction to the basic equipment and tools of a food service environment. Food preparation principles applied to various food categories, emphasizing both nutritional quality and palatability.
Basic Nutrition: Introduction to nutrition including functions, sources, characteristics, and recommended intake of nutrients; digestion, absorption and metabolism; special needs during various phases of the life cycle; diet therapy and patient assessment, education and counseling.
Nutrition and Fitness: An overview of contemporary nutrition concepts, including healthy eating, nutrition attitudes and behaviors; myths and realities of weight control; vegetarianism; food intolerances; dietary supplements; food safety; and nutrition and health maintenance for adults. This course is designed to help students become better-informed consumers of nutrition-related information.
Students who study under the Nutrition and Dietetics faculty at Â鶹AV are preparing for a career that Money magazine recently rated as one of the top three “jobs for saving the world.” Demand has been and will continue to be significant, as the U.S. Bureau of Labor Statistics has estimated that the job market in this area should grow up to 13% over the next five to seven years. In this program, you will gain the knowledge and skills required toward the goal of becoming a RDN.
